Should this have curdles in it. It’s in date and when I stirred it the curdles disappeared and it went smooth. It tasted fine ?

Hi Jennie, all alternative milk should be shaken before use due to some settlement. It sounds like this may have been the case here as after you had stirred the product the curdles went away leaving smooth milk.
If however, it curdled in your coffee some factors may have contributed to this.
1, Some coffee blends (especially single origin) are quite high in acidity which could lead to your milk curdling
2, If you overheat your milk before adding it to your coffee this could lead to the same.
Some things you might try to help your milk from curdling are.
1, store your milk at a colder temperature, you can get more air into your milk before it gets too hot.
2, I have heard of people letting the first 3 to 5 seconds of their coffee shot go and catch the rest. The theory is it’s less acidic but this is only hearsay as I have not tried it.
